Polyphenols are natural compounds found in nature. Poly, meaning many, and phenols, referring to the different compounds. This is important to understand and consider when considering which brand to purchase. Ther are a lot of brands that publish total polyphenols and identify a very high number in lab analysis, this is referred to as Folin-Ciocalteu colorimetric assay.  The reality is there are only a few phenols in extra virgin olive oil that are bio reactive and provide best benefits for consumers. The best testing for determine the bio reactive phenols is HPLC-DAD. This is the EU standard for determining the level of human healthy phenols that can be claimed by a producer. . Most producers do not publish phenol test results on their label. If the producer is reputable they will always have current year lab results posted for consumer review. Very high phenol count can result in an extra virgin olive oil that is almost unpalatable. They key is balance. Create an exceptional EVOO that balances very good phenol count with a variety of aroma and flavors as well.

Phenols act as natural anti-oxidents with great anti-inflammatory properties. They area also natural heat stabilizers. EVOO has a high heat point due lately to the polyphenols.


What To Check On The Label

  •  Polyphenols are not listed on most labels. This information can be obtained from reputable producers website.

  •  Most labels do not list acidity as this number changes as the EVOO is used. Again, most producers have lab record of the acidity level from day of harvest. This is one of the main indicators of extra virginity at time of creation.

  • Harvest date: Prefer a clearly stated, current season. Polyphenols decline over time.

  • Variety and origin: A single cultivar like Memecik and origins like Milas indicate predictable style and terroir.

  • Process: Cold extracted denotes a temperature-controlled mechanical process aimed at preserving aroma and antioxidants.

  • Also suitable for gentle to medium sautéing. If you see smoke or smell harsh odors, lower the heat.
