Quick Whole Wheat Psyllium Husk Skillet Bread

Ingredients
3 eggs
3 tbsp plain yogurt
1.5 tea glasses (approx. ¾ cup) extra virgin olive oil
1 cup milk
1 tbsp fresh lemon juice
2 cups whole wheat flour
1 tbsp psyllium husk powder (karnıyarık otu)
1 tbsp dried mint
1 pack baking powder (approx. 10 g / 2.5 tsp)
1 tsp salt
1 tbsp sesame seeds (for topping)

💡 Psyllium husk absorbs liquids rapidly and forms a natural gel, giving yeast-free batters great structure and elasticity. Pour the batter into your baking dish promptly after mixing to ensure an even rise.
Instructions
Combine Wet Ingredients: In a mixing bowl, whisk together the eggs, yogurt, milk, extra virgin olive oil, and fresh lemon juice until smooth.
Add Dry Ingredients: Fold in the whole wheat flour, psyllium husk powder, dried mint, salt, and baking powder. Mix with a spatula until fully combined into a thick, pourable batter.
Transfer to Pan: Pour the batter into a greased baking pan or cast-iron skillet. Smooth the top and scatter the sesame seeds evenly over the surface.
Bake: Bake in a preheated oven at 170°C (340°F) for about 30 to 35 minutes, or until the top is nicely browned and a toothpick inserted into the center comes out clean.
Cool & Slice: Let the bread rest and settle for 10–15 minutes before slicing.
