Ingredients
5 yellow onions (very thinly sliced)
1 bunch fresh flat-leaf parsley (finely chopped)
2 cups all-purpose flour (add gradually)
1 bottle (200 ml) sparkling mineral water
1 cup water (add gradually)
1 tsp salt
1 tsp black pepper
1 tsp red pepper flakes (pul biber)
½ cup olive oil (for shallow frying)

Instructions
Prep the Aromatics: Slice the onions paper-thin into half-moons. Finely chop the parsley. Place both in a large mixing bowl and toss with the salt, black pepper, and red pepper flakes.
Make the Batter: Pour in the sparkling mineral water. Gradually sift in the flour while stirring. Add the regular water in small increments until you achieve a smooth, viscous, and scoopable batter that coats the onions generously.
Heat the Skillet: Heat the olive oil in a wide skillet over medium-high heat.
Fry: Drop generous tablespoons of the onion batter into the hot oil. Gently press down on each fritter with the back of the spoon to flatten slightly.
