Lemon-Gold Orange Zucchini with Turmeric

Ingredients (Serves 4)
Main Ingredients:
2 zucchinis (very thinly sliced)
1 carrot (very thinly sliced)
1 onion (finely chopped)
2 tbsp rice (washed and drained)
Freshly squeezed juice of 1 orange
1 tsp turmeric
Salt (to taste)
5 tbsp Oro di Milas olive oil (divided for sautéing and finishing)
For Garnish (Optional):
Fresh mint or finely chopped dill
Instructions
Sauté the Onions: Heat a portion of the olive oil in a pan. Add the chopped onions, sprinkle with a pinch of salt, and sauté until they turn a beautiful golden color.
Add the Carrots: Toss the paper-thin carrot slices into the pan with the onions and sauté for a few minutes until they begin to soften.
Combine and Glaze: Add the washed and drained rice, the turmeric, and the very thinly sliced zucchinis into the pan. Pour the fresh orange juice directly over the vegetables.
Simmer: Cover the pan with a lid. Lower the heat and let the dish simmer gently until the vegetables and rice are perfectly tender and have absorbed the orange glaze.
Rest and Serve: Remove from heat and let the dish cool down to room temperature. Once cooled, drizzle the remaining olive oil over the top for that signature glossy, fresh touch. Garnish with fresh mint or dill, and serve chilled or at room temperature.
