Chewy Chocolate Spoon Cookies

Ingredients
100 g chocolate chips (for melting)
5 tbsp olive oil
1 egg
4 tbsp sugar (brown sugar is highly recommended for a chewier texture)
4 heaping tbsp all-purpose flour
½ pack baking powder (approx. 1 tsp)
40 g chocolate chunks (optional, to mix in or top the cookies)
Instructions
Melt the Chocolate: Place the olive oil and 100 grams of chocolate chips in a heatproof bowl. Set the bowl over a pot of simmering water (bain-marie method) and stir until the chocolate is completely melted and smooth. Remove from heat and let it cool slightly.
Whisk Egg and Sugar: In a mixing bowl, beat the egg and sugar together until the mixture becomes pale, thick, and fluffy.
Combine: Slowly pour the slightly cooled chocolate-oil mixture into the beaten egg mixture, whisking continuously to incorporate it smoothly.
Add Dry Ingredients: Fold in the flour and baking powder. Mix gently with a spatula until you get a very soft, sticky cookie batter. If you like, stir in the remaining 40 grams of chocolate chunks at this stage.
Scoop: Line a baking sheet with parchment paper. Using a spoon, drop portions of the sticky batter onto the sheet, leaving some space between each cookie as they will spread slightly.
Bake: Bake in a preheated oven at 180°C (350°F) for 8 to 10 minutes. Watch them closely—they should still feel very soft to the touch when you remove them from the oven. Let them rest and firm up on the baking sheet as they cool down.
