Crispy Chicken Pâté Fritters

Ingredients (Serves 4)
Main Ingredients:
½ boiled chicken (deboned and shredded)
2 boiled potatoes
1 onion
1 handful of fresh parsley
2 tbsp olive oil
Spices: 1 tsp each of salt, black pepper, ground red pepper, cumin
For Frying:
Olive oil
Instructions
Process the Mixture: Place the boiled chicken, boiled potatoes, onion, parsley, 2 tablespoons of olive oil, and all the spices into a food processor. Blend thoroughly until it turns into a smooth, paste-like pâté consistency.
Fry: Heat a generous amount of olive oil in a large skillet. Take spoonfuls of the chicken pâté mixture and gently drop them into the hot oil.
Golden Crust: Pan-fry both sides until they develop a light, crispy outer shell and turn a beautiful golden brown.
Chef's Tips:
Meatball Alternative: If you prefer shaping them by hand, you can add a small amount of breadcrumbs (galeta unu) into the mixture to give it more structure, transforming them into delicious chicken patties.
Serving Suggestion: To balance the richness, serve these hot fritters over a vibrant beetroot yogurt salad and finish with a few drops of freshly squeezed lemon juice. It creates a beautifully fresh, well-balanced plate!
